Hello, today I am making 'Pineapple Fried Rice'
We choose a ripened pineapple, otherwise it will be very sour
The pineapple should be heavy, and gives out a nice fragrance
We have 4 bowls of cooked rice (cooked the night before)
We have 4 eggs, separate the yolk from the white
150 g diced salmon, marinade from ground pepper and salt
200g chopped asparagus
20 prawns, washed and deveined
Marinade with ground pepper, chicken powder and sesame oil
Squid, already blanched and sliced
2 conpoy, rehydated and shredded
3 sliced shallots
crushed peanuts, 1tbsp finely chopped ginger
some sugar, fish sauce
Let's prepare the pineapple. Wash the pineapple first
Use a knife to cut out the top to form a lid. Leaving 1 inch on either side
This is the lid. Remove the flesh from the lid later
Cut the botton too, don't cut it all off. We can then get the pineapple flesh out more easily
We can then use cocktail sticks to secure it later
So this is the top, take the flesh out with a knife

Take the flesh out
Scrape out the rest of the flesh to form a bowl. We will use cocktail stick to secure the bottom
Turn it over, and use cocktail sticks to secure the bottom
Cut out the parts of the sticks which are sticking out
The pineapple is used to make the dish. Remove excess juice from the pineapple
1/2 bowl of pineapple
Use medium low heat to heat up the wok, fry the shredded conpoy, do not add any oil
Fry for 3-4 minutes, it should turn crispy
We can add some sugar and chicken powder to make it more flavoursome
It also makes it more crispy
Add a little bit of chicken powder
Whisk up the egg yolk and add into the bowl of rice. Mix well
Heat up the wok, add some fish sauce into the egg white
1/2 tsp fish sauce, and mix well
1 tbsp cooking oil into the pan
cook for 30 seconds
Add 1 tbsp cooking oil and cook the salmon
Fry in medium heat and ensure all sides of the salmon turn golden in colour
Add in finely chopped ginger, then the prawns. Cook in high heat
Use low heat to cook the shallots and finely chopped ginger
Keep the oil in the pan to fry the asparagus
add 1/2tsp fish sauce. Then take them out for later
Add 1 tbsp of cooking oil to cook the rice
Pineapple is added last, because it will turn sour if cooked for too long
3/4 tbsp fish sauce
Cook the rice for 2 minutes before adding the rest of the ingredients and pineapple
Now add the pineapple
Make sure we got rid of most of the juice from the pineapple, otherwise the rice will be soggy
We separated the yolk from the egg white, so the rice is coated with a layer of egg yolk. This gives it a nice colour
Golden rice, golden egg fried rice
The rice is ready, now we add in the squid
and the rest of the ingredients
Mix well
Looks fantastic, smells delicious
Add some ground pepper and sesame oil
Very tasty
Put the rice into the pineapple shell
Sprinkle some crispy conpoy and crushed peanuts
Pineapple fried rice is now ready to serve, please try it at home
